Banana Bread

Makes: 12 slices.

Ingredients

  • 4 very ripe bananas

  • 3 cups flour (your choice!)

  • 2 teaspoons baking powder

  • 2 teaspoons cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon salt

  • 2 eggs

  • ¼ cup milk (your choice!)

  • ¼ cup olive oil

  • 1 teaspoon vanilla essence

Method

1. Pre heat oven to 180 degrees. Line a loaf baking dish with baking paper.

2. Mash bananas in a bowl with a fork. Add eggs and whisk together.

3. Add milk, vanilla essence and olive oil to the mixture and combine well.

4. Combine flour, baking powder, cinnamon, nutmeg and salt to the banana mixture, mixing well.

5. Add mixture to baking dish. Bake on 180 degrees for 40-45 mins, until cooked through and golden on top.
