No Rice Risotto
Makes 2 Serves. Ready in 20 mins.
Ingredients
100g bacon
3 cups spinach
1 ½ cups broccoli, grated
1 ½ cups cauliflower, grated
1 zucchini, grated
½ cup cottage cheese
¼ cup sour cream
¼ cup diced haloumi
3 tablespoons flaked or chopped almonds
1 teaspoon chilli flakes
1 teaspoon parsley
1 teaspoon paprika
2 teaspoons garlic infused olive oil
Method
1. Add olive oil to a pan on medium-high heat. Dice bacon and add to the pan to lightly brown. Add broccoli, cauliflower, zucchini and haloumi to the pan. Season with chilli flakes, parsley and paprika and continuously mix.
2. Add cottage cheese and sour cream to the pan and again mix well into the mixture. Reduce heat and simmer for 10-15 minutes, stirring regularly.
3. Add spinach into the pan and stir through the mixture until slightly wilted down. Top with almonds, mix well again then serve.
