Creamy Vegetable Bake

Serves 6.

Ingredients

  • 4 cups vegetables (your choice!)

  • 1 cup cottage cheese

  • ¼ cup sour cream

  • ¼ cup grated cheese

  • 1 tablespoon cream

  • 1 teaspoon paprika

  • 1 teaspoon parley

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon olive oil

Method

1. Pre heat the oven to 180 degrees. Prepare a baking dish with olive oil.

2. Dice all vegetables and add to a large bowl. Add cottage cheese, sour cream, cream, paprika, parsley, salt, pepper and combine with the vegetables.

3. Add to mix to the baking dish and sprinkle with grated cheese. Bake in the oven for 1 hour until vegetables are soft and the top is golden.
