French Toast

Serves 1.

Ingredients

  • 2 slices bread

  • 1 egg

  • 2 teaspoons cinnamon

  • 1 teaspoon coconut oil

  • 1 tablespoon Greek yoghurt

  • ¼ cup berries

Method

1. Whisk the egg and cinnamon together in a bowl.

2. Heat coconut oil in a pan on low to medium heat.

3. Lay one slice of bread into the egg mixture covering one side, flip bread to cover the other side and add straight to the pan. Repeat with the second slice of bread.

4. Cook on medium heat on each side for 3 minutes or until golden brown.

5. Serve with Greek yoghurt and berries.
