Corn and Zucchini Fritters

Makes: 12 fritters.

Ingredients

  • 1 zucchini

  • 1 cup corn kernels

  • 1 egg

  • ½ cup LSA

  • ¼ cup milk (your choice!)

  • ¼ cup grated cheese

  • 2 teaspoons olive oil

Method

1. In a bowl beat together the egg and milk.

2. Grate zucchini and add to the bowl. Add corn kernels and grated cheese and combine well.

3. Heat olive oil in a pan on medium heat. Spoon mixture into the pan making pancake size fritters. Cook for 8 minutes on each side, or until golden brown.
