Granola
Makes 10 Serves.
Ingredients
2 cups oats
¼ cup almonds, chopped
¼ cup cashews, chopped
¼ cup pepitas
¼ cup sunflower seeds
¼ cup coconut flakes
4 teaspoons chia seeds
1 teaspoon salt
¼ cup olive oil
¼ cup rice malt syrup
½ cup diced apricots
Method
1. Preheat oven to 180 degrees. Lightly grease a baking dish and line with baking paper.
2. Combine oats, almonds, cashews, pepitas, sunflower seeds, coconut flakes and chia seeds in a bowl. Whisk olive oil and rice malt syrup in a jug. Pour over the oat mixture and stir well.
3. Spread the mixture evenly over the baking paper. Bake for 20 minutes, stirring every 5 mins.
4. Take from the oven and set aside in the baking dish to cool. Once cooled add the diced apricots and mix.
5. Store in an air tight container and use within 1 week or freeze then thaw once wanting to use.
