Chicken + Cranberry Salad
Serves 2.
Ingredients
1 cup spinach
½ cup cooked chicken (breast or schnitzel)
½ cup cucumber
½ cup avocado
2 tablespoons dried cranberries
2 tablespoons feta
2 tablespoons pepitas
1 tablespoon olive oil
1 teaspoon balsamic vinegar
Method
1. Combine spinach, balsamic and olive oil in a bowl.
2. Dice cucumber, avocado and chicken. Add to the bowl along with dried cranberries and mix.
3. Crumble feta over the top and sprinkle with pepitas then serve.
