Roast Couscous Salad

Serves 2.

Ingredients

  • 2 cups roast vegetables

  • ½ cup couscous

  • 1 cup boiling water

  • 1 cup spinach

  • ¼ cup flaked almonds

  • 2 tablespoons feta

  • 1 teaspoon olive oil

  • 1 teaspoon parsley

  • 1 teaspoon chilli

Method

1. In a mixing jug add the couscous and boiling water. Cover and leave for 7 minutes then stir with a fork.

2. Add spinach to a bowl and drizzle with olive oil, mix well. Add and combine the roast vegetables, flaked almonds and cooked couscous.

3. Crumble feta over the top and serve.
