Sautéed Spinach + Haloumi

Serves 1 as a nain, 2 as a side.

Ingredients

  • 3 cups spinach

  • 1 cup pumpkin

  • ½ cup flaked almonds

  • ¼ cup haloumi cheese

  • 1 teaspoons olive oil

Method

1. Heat olive oil in a pan on low - medium heat. Dice pumpkin and add to the pan to brown for 15 minutes, stirring as needed.

2. Dice haloumi and add to the pan once pumpkin is browned as slightly soft, stirring as needed until browned.

3. Add spinach to the pan and sauté while combining with the pumpkin and haloumi.

4. Once spinach has wilted sprinkle with almonds then serve.
