ANZAC Biscuits

Makes 20 Biscuits.

Ingredients

  • 1 ½ cups rolled oats

  • ½ cup desiccated coconut

  • ¼ cup olive oil

  • 3 tablespoons rice malt syrup

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • 2 tablespoons water

Method

1.Preheat oven to 180 degrees. Lightly grease a baking tray and line with baking paper.

2. Combine oats and desiccated coconut in a bowl. Add olive oil, rice malt syrup, vanilla and baking soda to the oats mixture and mix well. Add water to the mixture and again mix well.

3. Roll the mixture into 20 small balls and place on the prepared baking tray. Press flat and ensure there is plenty of room around each biscuit. Bake for 20 minutes or until golden brown.

4. Take from oven and set aside to cool, or enjoy warm!
